Lots of butchers here in my part of the world.
Traditional ones that sell every part of the animal from nose to tail.
They are making a welcome comeback.

I blame the big supermarkets, still Tom our local butcher kills his own beasts and butchers them on the premises , bit more pricey but well worth it.
